While you're planning, don't forget the range of each plane. The standard 172 is good for about 4 hours plus required reserve. I don't know about the 210. Some models do have long range tanks which give about 6 hours range. Also, from St. George it may not be a straight line to the area of interest. There are some big mountains in between and some pilots might prefer to go around them rather than cruise at over 10,000 feet with no oxygen. Check your sectional chart.
As for the number of people that can be carried, with full fuel it's usually one less than the number of seats. The limit is weight, not space.

An advantage to the 182 or 210 is greater stability. With the 152, and even to some degree the 172, you'll get bounced around a little.

BTW, Tom flew with a friend as pilot. They rented a 182 from North Las Vegas.
