The B737-200 can only carry about 125 pax fully loaded. Perhaps the Boeing list you read had a typo, or it was the B757-200 you were looking at? Therefore, 11 flights a day would account for only 1200-1300 pax.

Are there any vantage points from which you can see the Mercury Highway right up to gate 700? Perhaps Reveille Peak, or maybe Mt Stirling in the south? I agree that it may pay to stake out Brainwash Butte for a couple of days to see if any traffic does bypass TTR and continue on south-east.
