Most of the supplies for the cafeteria would be funneled up in plain looking semi trucks coming up from the Mercury area or using the back gate near Rachel. Though im sure now and then they have supplies coming in via C-130 or on another JANET aircraft in the cargo area in the belly of the aircraft. However any trucks that have supplies are government contracts and most of the drivers have to 'drop off' their cargo and then it is taken into the test range. All cargo is inspected when just inside the border before they get anywhere remotely close to the groom lake area, so it is nearly impossible to get any further than the inspection stage before you would be quickly and brutally arrested.
