The most direct route for your road trip from SFO to LAS takes you right past Edwards AFB (home of the AFFTC) and (with a slight detour) Palmdale, home of the famous Lockheed Skunk Works and the Blackbird Air Park. The outdoor museum is not actually open to the public, but the exhibits, including an A-12, D-21 drone and a U-2 can be seen from outside the fence.

In the SF Bay Area, check out Moffett Field near Palo Alto, featuring one of the world's largest hangars, built in the 1930's for the U.S. version of the Graf Zeppelin. I believe there is a museum open to the public now.

Scot already pointed out the Test Site Museum in Las Vegas. And of course, Area 51, the birth place of many secret aircraft, is only a day trip north of Las Vegas.
