The route you describe would be a fairly standard McCarran approach from the west. During sunrise and sunset the light changes very quickly, and contrails can appear to change color from a fiery red to a dull gray within minutes. Contrails are only formed at certain altitudes. In a landing pattern, it is common for a contrail to simply end. What remains are the bubbles you mentioned. For that I have no good explanation. Perhaps weather/wind related?
