Cockpit type is not going to matter much. These older 737s are paid for, and the USAF has a lot bigger spending priorities than getting newer ones.

The older 737s "thunder guppies" use more fuel than newer ones, but its cheaper to keep using these.

737 pilots have told me the older 200 models are actually the nicest flying models.
