The UAV pilots do talk like "regular" pilots. Sometimes "we" is used when the pilot is solo, though I haven't a clue why.

I know the Global Hawk has a satellite link using compressed digital audio to get the pilots voice to ATC frequencies. From what I was told, everything is COTS to keep the cost down, but the data link is encrypted.
