On our flight, there were just the three of us, the pilot, me in the right front seat, and Glenn Campbell in the back. He was able to move from side to side to look out of either window. For a clockwise trip (as we did), I wouldn't want to be the guy in the left rear seat. Not much to see. And forget about putting 3 in the rear. Also remember that the plexiglass optics of the rear windows are usually pretty crappy, especially in rental aircraft.

For two people I would say a Cessna 172 would be pretty optimum. Lots of excess power, but not too expensive. Maybe OK for 3 people, but a 182 might be more comfortable for 3 but the price goes up.
