There are two versions of the Cessna 210, one of which is pressurized. The windows of the pressurized version look more like ports than panes of glass, so you are right that they probably can't be opened.

Only the 210 and 177rg do not have wing struts.

Eller's book has a diagram of the Cessna 172, which I gather must be a popular plane. He indicates it is possible to photograph from the front seat between the prop and strut, but you need to be careful not to get the prop in the scene. The shot from the rear seat would be more of a side view, and thus subject more to blur.

Finding the charter is not easy. Searching anything "vegas" generates few useful hits thanks to clever website designers that make irrelevant sites come up in the search. Even google, which uses a link pointing voting system rather than meta text, gets useless hits. However, there are plenty of charter companies in the phone book.
