My understanding of an "interceptor" is that it just has to get close enough to launch missiles at the target (air to air), as opposed to "fighter" aircraft, which is more "in your face". Thus the interceptor wouldn't have to be as fast as the target plane. If you saw the old Henry Fonda movie "Fail Safe", you'll recall the intercepting planes got close, then launched missiles. Of course, one plane got past the interceptors and the rest is history.....
