It's not unusual for test aircraft to fly out over the ocean, the Pt. Mugu and Pacific Missile Ranges are often used for test flights.

"Big" tests out of Groom though are most often run on Wednesday or Thursdays. They spend the week preparing, then Wednesday night flying, and have Friday to clean up and start looking at the results. I've observed several unusual flights myself early Thursday mornings that fit this pattern.
