If the F-35 that was there was the one with the single piece canopy that opens forward, that was the full scale mock-up of the production version (The prototypes had a separate wind screen and canopy and other differences from the production version although they are very similar).

The reason for the working cockpit displays would be for marketing, since they want to sell them to as many countries as possible. A good way to do that is by having a cockpit that is able to demonstrate the advanced features of the cockpit/systems integration since that is where the payoff in terms of capability will really show to perspective customers.
